Homemade Chicken Zoodle Soup

This soup is so  tasty, you would never know it was healthful and  veggieful!  It is very reminiscent of the  canned soup you had  as a child, except  way way better!  That's why I love it!  If only I could make mini star shaped zoodles!

Homemade Chicken Zoodle Soup

Ingredients:
1 Large Chicken Breast
1.5 Qt Water
3 Cups of Zoodles
​2 Stalks of Celery (finely cut)
3 TBSP Chopped Yellow Onion
1 TBSP  Fresh Garlic
2 TBSP French  Fry Seasoning (or all purpose seasoning)
1/4 TBSP Celery Salt

Instructions:
Place chicken breast and water in pot.  Bring to boil.  Boil until chicken is thoroughly cooked.  LEAVING water in pot (this is now your chicken stock.. YAY free chicken stock!) remove chicken and shred.  Add shredded chicken back to chicken stock in pot.  Add remaining ingredients.  Bring to  simmer.  Let simmer until zoodles and  celery are  tender.  Serve hot to warm.  Enjoy!

Zoodle "Pasta" Salad with "Sweet" Italian

I have been a big pasta salad fan, ever since I was a little kid!  This is a good recipe for those who want to limit their carbs or who just want to add extra veggies into their diet. The naturally "sweet" Italian dressing gives it a flavor kick.  It tastes just like regular pasta salad, so don't let the zucchini scare you if you are not a big zucchini fan! I normally free hand everything in the recipe, but I finally had to formalize it so I can accurately track the nutritional content.  I  like to use the mini pepperonis instead of the full sized however the store I went to did not have it this time, so I diced up the full sized pepperoni.  Buon Appetito!

Ingredients:
  • 1 Italian dressing packet
  • Garlic powder (to taste)
  • Onion powder (to taste)
  • Basil, dried (to taste)
  • Oregano, dried (to taste)
  • Pepper, black (to taste)
  • 2 packets of Stevia
  • 0.25 cup(s), Red Wine Vinegar .
  • 0.25 cup(s), Extra Virgin Olive Oil
  • 3 cups, Cooked Zucchini
  • 10 Kalamata Olives, sliced
  • 16 slice(s) Turkey Pepperoni (diced)
  • 0.25 cup(s), Shaved Parmesan Cheese

Directions:
Mix italian seasoning packet, all herbs and stevia with oil and vinegar.  Add in cooked zucchini, kalamata olives (sliced) , pepperoni (diced), and shaved parmesan cheese.  Mix well.  Enjoy!
